Ingredients 4 herrings, cleaned and scaled butter for greasing salt and pepper 2 tbsp (1 oz) 25 g butter 2 onions, finely sliced 450 g/1 lb tomatoes, peeled and sliced 30 ml/2 tbsp malt vinegar parsley to garnish

Directions Grease an ovenproof baking dish. Set the oven at 190°C/375°F/ Make 3 shallow cuts on either side of each herring and sprinkle with salt and pepper. Melt half the butter in a frying pan. Add the onions and sauté gently for 5 minutes. Place the tomato slices on the base of the prepared dish. Add the onions and sprinkle with salt and pepper, and the vinegar. Arrange the fish on top and dot with the remaining butter. Cover and bake for 45 minutes. Garnish with parsley. Serves 4
