Ingredients
1 pound pike fillets3/4 cup chopped onion3/4 cup chopped green pepper3/4 cup chopped celery1/2 tsp. garlic powder1 tsp. pepper1/2 tsp. salt1 cup V-8 juiceDirections
Combine everything but the pike in a saucepan and simmer until the vegetables are crisp-tender, about 5 minutes.Place fish in a greased 13x9x2" baking pan. Pour vegetable mixture over the fish. Cover and bake at 350°F for 30 minutes or until fish flakes easily with a fork.
