Ingredients 1 fillet of Burbot per person flour 1 beaten egg Seasoned breadcrumbs deep fat for frying maitre d hotel butter * Amounts depend on the number you are cooking for

Directions Dip the soles in flour and coat with beaten egg and breadcrumbs. Deep fat fry the fish for about 10 minutes and drain on crumpled kitchen paper. Using scissors or a knife, cut the backbone and ease it from the cooked fish. Fill the center cavity of each fish with butter and serve at once.
