Ingredients
2 lb. Catfish fillets, cut to portion size1/2 cup melted ButterPaprika for color1/4 cup White Wine1 lemon cut in wedges
Easy Ingredients for the Apricot Cream Sauce
1 cup Heavy cream1 can pitted Apricots30 pecan halves (optional)Directions
First prepare the Apricot Sauce.
Drain the apricots and puree them with cream. Pour into a pot.
Chop pecans in a food processor or blender. Add to Apricot mix and slowly simmer until thickened.
The Catfish
Season the catfish with salt and paprika and place in baking dish with melted butter and wine.
Bake uncovered in a 450'F. oven 5 to 7 minutes or until catfish is flakes easily (do not overcook).
Top with Apricot Cream Sauce and serve.
