This is an adaptation of the famous French dish, Sole Bonne FemmeIngredients
4 Catfish Fillets
3 tbsp. olive oil <Directions
Sauce
The Chef's Way
3 tbsp. Butter3 tbsp. Flour1 cup milksalt and pepper to taste1/2 tsp. MSG (MSG>1/2 tsp. Garlic powder1/2 tsp. sugarSeedless grapesDirections
First make the sauce in a double boiler. Preheat the butter and flour to make a roux. Then slowly add milk stirring to mix ingredients together. Add garlic powder, salt, pepper, sugar and MSG. Stir until thickened and mix in Grapes.
The Easy Way Buy a pkg. ofprepared white sauce. prepare it according to Directions. Stir in an egg yolk to make it richer. Add the grapes to the sauce and you are done.
Saute catfish 4 minutes on each sides. When the fish is done, place it on a serving platter, cover with the sauce.
