Ingredients
1 lb. finely chopped catfish fillets1/2 cup oil1 tbsp. chopped bell pepper4 tbsp. chopped green onion1 egg--beaten2 tbsp. mayonnaise6 tbsp. dry bread crumbs1/4 tsp. ground black pepper1 tsp. saltDirections
Saute bell pepper and green onion in 2 tbsp. oil until soft.
Oil a baking pan. Cut catfish into bite size pieces. Bake catfish in 375F oven till flaky--about 20 minutes.
Mix sautéd pepper and onion, catfish, and rest of Ingredients. Chill for at least 20 minutes. Form small patties for appetizers or large for entree. Heat rest of oil on medium heat. Saute patties until golden brown on each sides.
Serve with Dijon sauce. Serves 4 for entree or 8 for appetizers
Dijon Mustard Sauce
1/2 cup plain yogurt3 tbsp. Dijon Mustard1/3 cup mayonnaise1 tbsp. chopped onion3 tbsp. red wineDirections
Mix all Ingredients and warm. Yields 1 1/4 cups.
