Bluefish is a fatty, fine-textured fish, ranging from white to silver in color. Remove the dark, Strong Tasting strip that runs down its center before cooking to avoid a fishy taste.
2 Bluefish Fillets3 1/2 tbsp. butter4 ounces (1/2 cup) of sour cream1 1/2 tsp. horseradish
Mix sour cream and horseradish and warm in microwave or over a slow flame
Melt butter and sauté Bluefish until brown. Do not overcook.
Pour the horseradish sauce over the Bluefish and serve.
