Ingredients 1 1/2 lb. Grouper Fillet 1 ripe Avocado 2 oz. Butter 1 tbsp. Lime Juice 1 Clove Garlic; minced 2 tbsp. Salsa 1 tsp. Lemon Rind; grated 2 oz. Milk 1 tsp. Dijon Mustard 1/3 c Fine Dry Bread Crumbs 1 tbsp. olive oil

Directions Put the avocado, butter, lime juice, salsa and garlic in a blender and blend on high. Set mixture aside. Combine lemon rind, Dijon mustard and milk; dip fillets in lemon juice mixture. Next dredge the fillets in bread crumbs. Put them on an oiled baking sheet and bake at 450øF for 7 minutes on a side or until fish flakes easily when tested with a fork. Move the fillets to a serving platter, and top with the avocado sauce.
