Directions
Combine salmon, beaten eggs, and pepper
in a bowl. Mix well and form into 4 large
patties. Coat with bread crumbs.
Heat oil in a large, nonstick skillet over
medium-high heat. Add patties and sauté to
taste or until golden brown and crisp. Adjust
heat as needed to brown evenly.
Spead mayonnaise on the rolls. Top with salmon
Patties with lettuce, tomato and serve.
Makes 4 servings. Can also be served on toast.
