2 fresh trout 

2 1/2 tbsp. butter 
1/2 finely diced sweet pepper 
1 finely dices medium onion
1 cup white wine
Salt and pepper to taste

Saute onions and pepper until onions
begin to turn brown

Add the trout and the white wine and  
simmer trout until done.   Do not overcook.
 
Deglaze pan and pour the onion/pepper
wine sauce over the trout. 

Serve.
