2 [1 1/2-pound [680-g each] fillets of FlounderSalt and pepper, to taste8 ounces [240 g] butter4 ounces [120 g] of breadcrumbs4 small onions, minced1/4 tsp. Thyme1/4 tsp. Tarragon1 cup [250 ml] Vermouth1 tbsp. [15 ml] chopped parsleyDirections
Preheat oven to 400°F.
Saute Flounders in a little melted butter and sprinkle one sides with a little breadcrumbs.
Mix Tarragon and Thyme, salt and pepper, add the minced onion and some butter in an oven safe baking dish. Dredge the Flounder fillets in the mixture and pour in Vermouth.
Brown in a Preheated oven for 25 minutes. Move the fillets to a serving dish. Pour the sauce over the fillets and serve
