Ingredients Ingredients 2 [1 1/2-pound [680-g each] fillets of Flounder Salt and pepper, to taste 8 ounces [240 g] butter 4 ounces [120 g] of breadcrumbs 4 small onions, minced 1/4 tsp. Thyme 1/4 tsp. Tarragon 1 cup [250 ml] Vermouth 1 tbsp. [15 ml] chopped parsley Directions Preheat oven to 400°F. Saute Flounders in a little melted butter and sprinkle one side with a little breadcrumbs. Mix Tarragon and Thyme, salt and pepper, add the minced onion and some butter in an oven safe baking dish. Dredge the Flounder fillets in the mixture and pour in Vermouth. Brown in a preheated oven for 25 minutes. Move the fillets to a serving dish. Pour the sauce over the fillets and serve
