Ingredients
1 pound [454 g] Flounder or haddock fillets1 egg, slightly beaten1/4 cup [60 ml] low fat milk1 cup [330 ml] breadcrumbs1 tsp. [5 ml] oregano1/4 tsp. [1 ml] salt1/4 tsp. [1 ml] pepper2 tsp. s [10 ml] lemon juice2 tbsp. s [30 ml] water1 tbsp. [15 ml] butter2 tbsp. minced blanched almonds1 medium minced onionsPreheat oven to 425°F [220°C].
Beat egg and milk together.
Mix breadcrumbs, oregano, salt and pepper. Dip fish fillets into milk mixture; then coat with breadcrumbs mixture. Lay coated fish fillets sides-by-sides in a greased baking pan.
Mix lemon juice, water and melted butter and pour over fish fillets; sprinkle with minced almonds and onions and bake into Preheated oven, uncovered, for approximately 10 minutes or until flesh is flakes or is no longer translucent.
