Ingredients
4 catfish fillets (4-6 oz. each)
2 tbsp. olive oill1 tbsp. margarine or butter1/2 cup coarsely chopped pecansGinger peach Sauce (recipe follows)salt and PepperRinse fish and pat dry. Preheat oil & butter: in a large frying pan, add pecans and cook for 1 to 2 minutes. Remove nuts to paper towels to drain. Saute fish in the pan until it is crisp and golden on bottom, about four minutes.
Turn fillets over and cook for 4 minutes more. Arrange fillets on plates. Add pecans to Ginger Peach sauce and spoon over the fillets.
Ginger Peach Sauce:
1 can peach halves11/2 tsp. powdered ginger1 pkg. dried peaches (or apricots)4 oz. heavy creamDirections
Drain 1 can peaches. Place peaches in blender. Add dried peaches, heavy cream and 2 tsp. ginger powder and blend on high adding dried peaches until you get the desired smoothness. Preheat and pour over fillets.
