Easy Halibut Omelet

1 cup of cooked Halibut in small pieces 4 eggs
2 tbsp. of minced parsley
1 tbsp. crushed red pepper
2 tbsp. of minced onion
salt and pepper to taste
Directions
Mix together all Ingredients. Empty mixture into a large frying pan with a little olive oil. Cook omelet on both sides until done. Serve with a salad and some good wine.
