Ingredients 1/2 cup Olive oil 1 tsp. thyme 1. tsp. oregano 2 diced Tomato 1 diced medium Onion Salt and pepper (to taste) 1 tsp. Garlic powder 1 tbsp. Dijon mustard 1 cup white wine or sherry 1 tsp. Accent 4 Mahi Mahi fillets (6 oz ea)
Directions Put all ingredients except the wine and the Mahi Mahui in a skillet and sauté gently until tender. Put the Mahi Mahi on top or the vegetable/herb mix, and add white wine with Accent. Cover the pan with a pot lid and poach until done Garlic Mayonnaise Thoroughly mix 1 additional tsp. Garlic powder to 1 cup mayonnaise: Warm and serve as a sauce. Put the Mahi Mahi on a serving platter, surround with cooked vegetables and cover with garlic mayonnaise.
