Ingredients
1 lb. Muskie Pike fillets1/4 cup seasoned breadcrumbs1 tsp. Rosemary1 tsp. Garlic Powder2 eggs, beaten1/4 tsp. salt1/4 tsp. pepper3 tbsp. butterSauce:
1 cup heavy creamDirections
Mix the egg and the seasonings
Dip the Muskie fillets in the mixture.
Dip the coated fillets in the breadcrumbs.
Saute until fillets are tender (4-5 minutes on a sides)and flake when tested with a fork.
Remove fillets to serving dish.
Deglaze the pan with heavy cream and simmer a few minutes to warm before pouring on the fish.
