Ingredients

Pike fillets for 4
7 diced Mushrooms
1 large Onion diced
8 shredded baby Carrots
2 tbsp. Butter
1/2 cup White Wine or Sherry
1 sprinkle of Nutmeg
1 tsp. sugar
Salt and pepper to taste


Directions

Saute the onions, mushrooms, salt, pepper nutmeg and 
carrots until onions are glazed.  Top with Pike 
fillets and white wine or sherry sugar  and nutmeg.

Cover pan and poach until Pike fillets are tender.  
Serve.
