Ingredients

Ingredients 4 Catfish fillets 3 tb Lemon juice

3 tbsp. Soy sauce
3 tbsp. Vegetable oil
1 cup Thinly sliced red pepper
1 cup Sliced celery
1 cup Snow peas
1 cup Sliced fresh mushrooms
2 tbsp. Cornstarch 3/4 c Water
1 tsp. salt
1/4 tsp. Pepper Hot Cooked Rice Cut fillets into 2 x 3/4" strips. Marinate fish for 30 minutes in lemon juice and soy sauce. Heat
2 tbsp. oil in a wok or large skillet for 2 minutes. Then add celery and; stir fry 2 minutes: next add red pepper, snow peas and mushrooms and stir fry 2 minutes more. Remove the vegetables and set them asides. Add the remaining tbsp. oil to wok and heat over medium high heat for 2 minutes more. Drain fish, saving the lemon juice and soy marinade. Stir fry the fish for 2 minutes: then put the vegetables back in the wok. Mix your cornstarch, water, salt and pepper and reserved marinade into the wok and cook for a final 2 minutes or until slightly thickened. Serve over hot cooked rice.
